Here's a recipe my mother has for her homemade pesto! It's all homegrown with fresh basil that we grow in our backyard. Make it a summer project. First, start by getting your own vegetable garden together! Makes a great summer project! If gardening isn't your thing, then start by going to Zagara's and picking up the following ingredients:
- 2 tablespoons pine nuts
- 1 garlic clove, crushed
- Kosher salt and black pepper
- 1 1/4 cups of FRESH basil leaves
- 2 ounces Parmesan cheese, grated
- 2 ounces Pecorino cheese, grated
- 1/2 cup of exrta-virgin olive oil
To make the Pesto, place the pine nuts, garlic, salt and pepper, basil and the cheeses in the bowl of a food processor. Pulse till the basil is mashed up. With the machine still running, and the oil gradually and process until creamy and smooth. Let it chill for a bit.
And that's it! So easy. So grab some pita chips, crackers or spread it on your burger (thank you bobby flay), and a nice cold drink, and enjoy your freshly made pesto.
