We’ve been snacking on apples every day, but have plenty more to use for cooking. A good friend of mine (and fellow slow cooker devotee) mentioned that she loves to make slow cooker applesauce. She referred me to this recipe from the fantastic blog A Year of Slow Cooking.
I thought the recipe sounded great, but the apples we picked were so sweet and flavorful that I didn’t think they needed to be enhanced with sugar, vanilla or cinnamon. Plus, this Applesauce Cake recipe caught my eye and it calls for unsweetened applesauce. I figured I’d make a batch of unsweetened applesauce and eat part of it and use the rest for the cake.
This was definitely the easiest thing we’ve made in the slow cooker, so far.
Slow Cooker Applesauce (adapted from A Year of Slow Cooking)
Makes: 2 cups applesauce
Prep: 10 minutes
Slow Cook: 6 hours on LOWIngredients:
4 medium-sized apples and 6 small apples (we used 4 medium-sized Golden Delicious, 2 small Empires, 2 small Granny Smiths and 2 small Fujis)
juice from one lemon
1/4 cup waterMethod:
1. Peel, core and chop apples into 1-inch chunks. Place in slow cooker. Add water and lemon juice and mix to combine. Cover and cook on LOW for 6 hours.2. Mash apples and stir well.
